He later opened his own catering business and consulting practice, and also served as a chef/instructor at the Culinary Institute of America –San Antonio. He has led the school’s barbecue team to many smoking victories, and his experience as the Operational Chef of the Food Network’s “Restaurant Impossible” has been invaluable to his consulting work with restaurants. Chef Brian’s catering business is renowned for its delicious food and impeccable service, and he is always striving to provide his clients with the best possible experience.
